Gaetano Arnone is a good friend of ours, he’s a master butcher who studied under the infamous Dario Cecchini (Chef's Table, Officina della Bistecca, Antica Macelleria Cecchini). He is the head chef at Otto in NYC, a fabulous salumist and just one of the best guys on the planet with a lot to say about food so I was super excited to interview him about Italy In Bocca.
