Nerding out on food.

A little departure from our Italian roots (although I’d love to see Baci Perugina do something like this) … just came across this (at least to me) fascinating video on how to put a hologram on chocolate, or any hard candy.

The full video runs about 30 minutes, and is delightfully sweet with science, so Ill give you a quick waiting-for-the-bathroom-at-a-party breakdown …

Holograms are produced by imprinting very small patterns onto pieces of very thin plastic. These patterns diffract light in a certain way to produce an image.

Any glass can reproduce this effect, and yes, chocolate, hard candy, and plastic can all be considered glass. Glass is just a liquid that has been cooled to the point that it is incredibly viscus. Let that sit in for a sec. Your window is basically frozen water. Science amirite?

So you need to cool sugar, or chocolate triglycerides a certain way so they can be introduced into those little grooves and have the pattern imprinted in them. Once you do … presto! A light show you can eat!

I donno about you but I’ve pretty much mastered all things sour dough at this point. Ready to get my Mr. White on with my candy game in the kitchen.
